Death in the Afternoon
30ml Absinthe
1 sugar cube
Top with Champagne

The perfect absinthe drink, according to Ernest Hemingway was this creation of his in the early 1930s. I have added the traditional sugar cube to give the drink that sought after sweetness necessary when drinking absinthe.
Slowly pour the absinthe over the sugar into a champagne flute using an absinthe spoon.
Dissolve all the sugar into the drink and then top with champagne.
